Prep Time: 10 minutes Cook Time: 18 Minutes Serves: 4
1 19 fl oz can black beans drained & rinsed
1 13 fl oz can chick peas drained & rinsed
1 cup cooked brown rice
1 handful cilantro chopped
Juice of 1 lime
2 avocados peeled, pitted and chopped
1/2 red pepper chopped
1/4 cup extra virgin olive oil
1 jalapeno pepper, seeded, diced finely
3 garlic cloves minced
- Cook rice as directed on package, boiling method and rinsing is preferred, the rice will move more freely in this dish
- Place all ingredients in a medium-large bowl and toss together— let sit for a few minutes before serving to allow all ingredients to blend.
- You can make this dish without the rice and have pure protein, we personally like the grain in our dish to feel like we are having a more balanced meal.
- Whole grain pasta is a nice alternative also.
